Can we use the watch overseas? What SIM card should we use?

The SIM card should be consistent with the Network provider for the particular country network standard. You may be able to set the local SIM card to roaming but for data consistency you should use the country local SIM. 

You will need to obtain the country network operator APN name and set the internet parameters in the watch or tracker (refer to the APN settings)
